About the Japanese restaurant "Himuka"
The passion and dedication put into cooking
- Head ChefKoichi Tsuruta
Born in Miyazaki Prefecture in 1971.
Influenced by his mother, who worked as a waitress at a traditional Japanese restaurant, he developed an interest in Japanese cuisine and, driven by a desire to "eat delicious food," embarked on a career as a chef.
Having honed his skills at sushi restaurants and hotel restaurants, he focuses on Japanese cuisine while also working on creative dishes.
Influenced by the aesthetic sensibilities of Kitaoji Rosanjin, the restaurant values not only the food itself but also the harmony with the tableware and the space, reflecting the bounty of Miyazaki's sea, mountains, and land on each plate.

The blessings of the sea, mountains, and land, nurtured by Miyazaki's gentle nature.
To deliver the best possible taste at the most delicious moment, we visit producers, personally touch the ingredients, and listen to the voices of the season and the land.
The aroma of charcoal grilling, a dish that reflects the season, and harmony with the tableware.
We strive to bring out the best in each ingredient, and through our dishes, we aim to allow our guests to experience the climate and changing seasons of Miyazaki.
Furthermore, we value not only the taste of the food, but also the pace at which our customers eat and the overall atmosphere, striving to create a pleasant experience with each dish.
After finishing the meal, I felt a sense of satisfaction and wanted to visit again.
We hope to provide you with a memorable Japanese experience.

Connections with producers
To truly understand the appeal of the ingredients nurtured by Miyazaki's rich natural environment, we make it a point to visit producers, see with our own eyes, touch with our own hands, and talk with them.
We connect the bounty of Miyazaki to each dish, along with the passion of the producers.
The delicious flavor brought out by charcoal grilling
To bring out the best in the ingredients, we place great importance on cooking them over charcoal.
By paying attention to aroma, sound, and even the slightest changes, we capture the most delicious moment for each ingredient on a single plate.
The aesthetic sense embodied in the vessel
The tableware that enhances the presentation of the food is also an essential element of Japanese cuisine.
Featuring original tableware by ceramic artists from Miyazaki Prefecture, as well as carefully selected pieces chosen to complement the cuisine and seasons, Himuka.
